Besides wine and viticulture, Ignaz is particularly interested in forestry. He knows a great deal about the different trees, how to build up humus in forest soils, why it is important to fell some trees from time to time, why the timing and season matter and many many other things.
Above all, he loves using the local wood for building new parts of the winery and he is proud of the fact that every wooden part of our home has once been a tree from our surroundings.

Yesterday we cut a 140 year old tree (we counted all the rings). Next to it, there where growing many young trees and we started to think: Once these young ones will have reached that age, it will be the year 2164. That’s impressive, isn’t it? 🌳
